The other unusual method employed at Copper Fox (unusual in the single malt world) is the use of wood-chips in the ageing process. Apple, oak and cherry wood ‘chips’ are added to the first ageing barrel. This method effectively ‘accelerates’ the wood-aging process by exposing a much greater surface area of wood to the spirit. Sceptics abound – but the Scotch Whisky Research Institute judged a 6-week old sample to be a 7 to 8 year old whisky.

Our signature single malt, aged with a progressive series of hand toasted, select seasoned, new and used applewood and oak chips inside used bourbon barrels, transferred to a second used bourbon barrel and then finished in used Apple Brandy barrels. This stunning whisky acquires additional depth and multiple layers of flavor attributed to the residual brandy spirits in the wood.

Tasting Notes:

Colour: Rose gold.

Nose: Fragrant nose of ripe orchard fruit, candied ginger, fresh sawdust, and damp soil.

Palate: Silky body reveals a palate composed of toasted cinnamon stick, sandalwood, dried apples, lemon zest, and barley sugar.

Finish: Faint white pepper note accompanies a subtle heat that smolders into a sweet and savory finish of apple marmalade on freshly toasted bread.
